Unlike flower honey, oak honeydew is a honeydew produced by bees from a sugary substance (honeydew) collected from oak sap, made available by small insects. This unique process makes it an exceptional and highly sought-after honey.

Its color is very dark , ranging from deep brown to charcoal black, and it is distinguished by its slow crystallization , retaining a liquid and viscous texture for a long time.
